Bar-Type Cookie Filled with a Creamy Chocolate Ganache Filling

Milk chocolate chips are melted along with sweetened condensed milk to create a ganache-like filling which is sandwiched between two layers of oatmeal brownies.

Chocolate oat bars are brownie-like treats which are filled with a chocolate ganache type of filling. Traditional ganache is made using a combination of heavy cream and chocolate.

Satisfy a Sweet Tooth

Chocolate oatmeal brownies are very rich, serve them along with a glass of frosty, cold milk, or a mug of freshly brewed, strong, hot coffee. For a really decadent treat, serve the brownies with a dollop of whipped cream, or a scoop of ice cream.

Ingredients for Chocolate Oat Bars

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups old fashioned oats
  • 12 tablespoons butter or margarine - room temperature
  • 1 cup brown sugar - packed
  • 12 ounce package milk chocolate chips
  • One 14 ounce can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup pecans - chopped

Directions for Chocolate Oat Bars

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, sift together the flour, baking soda and salt.
  3. Stir the oats into the flour mixture.
  4. In another bowl, cream together the butter and brown sugar.
  5. Mix the butter and brown sugar mixture into the oat and flour mixture, until well blended.
  6. Spray a 13 by 9 inch glass baking dish with non-stick cooking spray.
  7. Spread 2/3 of the oat bar mixture onto the bottom of the baking dish.
  8. Add the chocolate chips and sweetened condensed milk to a microwave safe bowl.
  9. Place the bowl in the microwave and heat for 1 minute.
  10. Remove the bowl, and stir to combine the melted chocolate with the sweetened condensed milk.
  11. If the chocolate chips haven't completely melted, heat in the microwave for another 30 to 60 seconds.
  12. Immediately stir the vanilla extract and pecans into the chocolate mixture.
  13. Work quickly to evenly spread the chocolate filling on top of the oat bar mixture before the chocolate mixture sets up.
  14. Sprinkle the remaining oat bar mixture on top of the chocolate filling.
  15. Lightly press the oat mixture into the layer of chocolate filling
  16. Place the baking dish in the oven, and bake for 30-35 minutes, until the oat topping has started to brown around the edges.
  17. Place the baking dish on a wire rack, and let cool slightly before serving.

Recipe Tips and Suggestions

  • Semi-sweet, white chocolate, or even peanut butter chips can be used in place of the milk chocolate chips.
  • Walnuts can be used in place of pecans in this brownie recipe.
  • The nuts can be left out of the chocolate oat bar recipe if desired.
  • 12 tablespoons equals 3/4 cup, or one and a half sticks of butter or margarine. Unsalted, sweet butter works best in this recipe. If using salted butter, or margarine, the 1/2 teaspoon of salt does not need to be added to the oat bar mixture.
  • Use old fashioned oats, not quick cooking or instant oats, to make the chocolate oat bars.
