Walnut Chicken Salad with Herbed Butter

Delicious Finger Food to Feature at a Tea Party or Bridal Shower

Learn how to combine a herb butter along with a chicken salad to make delightful walnut chicken finger sandwiches.

Walnut chicken salad finger sandwiches would be the perfect food to feature at a tea party, bridal shower or breakfast buffet. The finger sandwiches yield bite sized portions, which can easily be picked up and eaten by hand.

Herbed Butter

This herb butter can be used in the finger sandwich recipe, included below, or as a topping for fresh cooked rice, hot noodles or even baked potatoes. Leftover herbed butter can be stored in the refrigerator for up to one week. Use whatever fresh, mild tasting herbs are in season in the garden, or that are available at the grocery store.

Ingredients for the Herbed Butter

  • 1 stick unsalted butter - room temperature
  • 1 tbsp minced fresh herbs - choose from chervil, parsley, dill, fennel, chives, etc.
  • 1 tsp freshly grated lemon zest
  • 1 tbsp freshly squeezed lemon juice
  • ¼ tsp freshly ground white pepper
  • ¼ tsp salt

Directions for the Herbed Butter

  1. Place the softened butter into a small mixing bowl.
  2. Add the remaining ingredients to the bowl.
  3. Use a large spoon to cream the ingredients together until well blended.
  4. Use immediately in the walnut chicken salad finger sandwiches recipe, included below, or store in the refrigerator until ready to use.

Walnut Chicken Salad

This recipe can be the star attraction at a picnic or outdoor BBQ, or use it in the walnut chicken salad finger sandwich recipe, which is included below.

  • 1 - 9.75 oz. can chicken breast - drained and flaked
  • ¼ cup mayonnaise
  • ¼ teaspoon salt
  • 1/3 cup chopped walnuts

  1. Place the chicken in a small mixing bowl.
  2. Add the mayonnaise and salt and stir well.
  3. Add the walnuts and stir until well incorporated into the chicken mixture.

Combine the two recipes listed above, into one delectable combination. This recipe makes 32, bite sized walnut chicken salad finger sandwiches.

Ingredients for the Walnut Chicken Salad Finger Sandwiches

  • 1 recipe herbed butter - room temperature
  • 1 recipe walnut chicken salad
  • 16 slices Pepperidge Farms very thinly sliced whole wheat bread

Directions for the Walnut Chicken Salad Finger Sandwiches

  1. Spread each slice of bread with a bit of the herbed butter.
  2. Top 8 of the slices with a bit of the chicken salad.
  3. Cover the chicken salad bread with the remaining 8 slices of buttered bread.
  4. Cut the crusts off of each sandwich.
  5. Cut each of the 8 sandwiches into 4 equal pieces.
